Manual Process, A Traditional Craft

Founded in 1954, in Olhão, southern Portugal, Conserveira do Sul has always remained true to its roots and traditions. Our production is defined by a strong manual componentfrom fish preparation and filleting to careful canning, every step is carried out with precision and attention to detail.

This artisanal process requires experience, dedication, and care — qualities embodied by our team of over 100 professionals, who give their best every single day.

Over 60% of our team are women, many with decades of experience. These women continue to preserve time-honoured techniques that are deeply ingrained in both the local culture and the canning industry. With trained eyes and skilful hands, they carry out a meticulous process, treating each fish with the respect it deserves and upholding the high standards for which our products are known.

Thanks to this traditional approach, we are able to offer products of exceptional quality, while preserving the natural properties of the fish — with no added colourings or artificial preservatives.

A Social and Human Commitment

More than 70% of our employees live in the Algarve region, with most residing in Olhão, where our production unit is located. This local connection is one of our greatest strengths. We value proximity, generational knowledge, and the pride that comes with producing something that so authentically represents the best of southern Portugal.
